Bare-hand contact with ready-to-eat (RTE) foods is generally prohibited unless the establishment has received approval and follows strict procedures, including a written plan and additional hygienic practices.

     – 150°F for 1 minute

I found this course very informative, and easy to understand. Although I already am following the protocol of working in a public food establishment, it keeps me aware of my daily habits, i.e. hand washing, or changing my gloves, and how myself and coworkers need to practice these things no matter how busy we are.
