Bare-hand contact with ready-to-eat (RTE) foods is generally prohibited unless the establishment has received approval and follows strict procedures, including a written plan and additional hygienic practices. 

For cooking temperatures, Montana follows the 2013 FDA Food Code, including:

  • Comminuted meats:
     – 145°F for 3 minutes
     – 150°F for 1 minute
     – 155°F for 15 seconds
     – 158°F for 1 second
  • Hot holding: 135°F or above
  • Cold holding: 41°F or above

There was good information, but the experience was not great. Here are some things I really did not like: the robot narrator was very annoying; the timing was often off between the audio and video; I could not go back to certain points in the video without replaying the entire video; the section on variances was not covered well; but then there are several points that get repeated many times. Repetition is good for learning, but these videos can be rewatched as many times as needed. Some of us don’t need that much repetition, and it just makes for an unnecessarily longer video.

I had to use the closed caption for all modules except for two. There was no volume on the rest. It was difficult to follow along at times.
